Grilled asparagus with mozzarella and prosciutto has long been one of my favourite little snacks, side dishes or starters. It’s been ages since I’ve had a really substantial cake, one that wasn’t made using ‘stiffly whisked egg whites’ and air…so I decided to make this, my version of a Sticky Toffee Pudding cake! Basically a sticky toffee pudding without the sauce, and made as a cake to snack on throughout the day or nom with tea for your elevenses! There are some gorgeous Slimming World cakes out there, but often they just end up being a limp, (usually lemon flavoured) omelette, and that honestly doesn’t constitute a cake for me! One of the things I really try to do with my pudding or cake recipes is to make them as close as possible to the real thing, my syn free cheesecake for example is an actual cheesecake, and in a similar way this is an actual cake! I adore a good ‘one pot’ pasta recipe…because I absolutely hate doing the washing up! I know that washing dishes is a necessary part of doing a lot of cooking (which I do!) but that really doesn’t stop me hating it. So, any recipe which means I essentially just have a chopping board and a sauce pan to wash up is a massive winner in my books! Add into the mix that this Creamy Cajun Chicken Pasta is absolutely to die for, and I was a happy bunny when I got to tuck into it! (more…)
Perfect for sharing, these Chicken Quesadillas are packed with speed food, melted cheese and tender chicken, and completely syn free! Still being able to eat chips is probably one of the best things about being on Slimming World. In fact, since starting just over a year ago I’ve definitely eaten more chips than I ever would have done before! The number of times I’ve had people round for dinner and made chips, only for them to say “Oh so you’re not doing Slimming World tonight then?”…I then explain that I am absolutely doing Slimming World, I’ve just made the chips in such a way that they are syn free and oh so delicious! Needless to say, said dinner guests are always suitably impressed and wolf down their ‘healthy chips’ in satisfaction! (more…)

We all have them don’t we? Those days where it all seems too much and we just want to say f**k it and throw in the proverbial towel. If you don’t you’re a very lucky (and slightly odd) person, and I seriously envy you! I’m talking about those days where losing weight just feels like a never ending journey requiring far too much effort for far too little reward. Given that losing weight has unquantifiable benefits, from a physical and mental health point of view, that might seem stupid, but sometimes it’s just hard for those huge benefits to out-way quite how exhausting losing weight can be. I’m really quite proud of this recipe! Not only was it syn free and delicious, but it was super cheap and looked really impressive when served up, what more could you want really? The ballotine is stuffed with delicious bacon, mushrooms and spinach, on a bed of cheesy mash and accompanied by basil roasted cherry tomatoes, it really was a winning dish, and my darling grandpa who enjoyed it with me wholeheartedly agreed! I fell in love with Bearnaise sauce in a gorgeous French brasserie in Paris whilst on holiday with my mum and sister, but given that your standard Bearnaise recipe contains about a ton of butter it’s not the most Slimming World friendly thing on the planet.
After a year of going without (except one rather naughty evening out where steak and chips just didn’t feel right on its own!) I decided that there must be a way to make the same delicious, rich and creamy sauce without a shed load of butter. Turns out, I was right. It’s seems that it’s not actually the butter that gives the sauce it’s delicious flavour, although I’ve not completely butchered the recipe and have included some tasty Flora Light (lower in syns but still has a great buttery taste), just in a much smaller quantity than you would use butter in a regular recipe. With a few additional tweaks, this turned out better than I could have hoped and was seriously so easy to make! (more…)
Do you ever have one of those weeks where you feel that you’ve done everything perfectly, but the number on the scales just isn’t budging? Well, I have and it’s incredibly frustrating. I am not a Slimming World consultant, and I have not been trained by Slimming World, but I’ve been doing this for over a year now and in that time I’ve gained a pretty good insight (from my own struggles and from those around me) into the things which could be stopping the weight from shifting.
Hopefully this might help identify some things you could adjust or change. I will stress though that the plan works differently for everyone, and there’s no hard and fast rule for how fast you should lose weight on Slimming World! It’s easy to get disheartened when you see other people with big losses, but just remember that the most important thing is that you’ve taken control of your weight problems, and you’re doing something about them! Never let anyone make you feel bad for the rate at which you’re losing weight, and NEVER EVER give up because you feel it’s not shifting fast enough. Nobody ever said that losing weight was easy, if it was everyone in this world would be slim. It’s a hard journey, but with the right tools and support it’s one that you will absolutely get to the end of. As I say, these are just some observations, and generally accepted principles, that might make a bit of difference to your weight loss, and the first one might surprise you! (more…)
