Easy Peasy 30 Minute Cauliflower Pizza

I’m a pizza addict and I just can’t seem to help it! Give me the option of eating healthily or stuffing my face with pizza and invariably I’ll give in and do the latter,  but now…I can do both because this pizza is totally syn free and even perfect for an SP day! Ideal for getting back into the swing of things in the new year it’s the ideal, low carb, alternative to greasy takeaway and that is unbeatable in my opinion!

This pizza surprised me entirely to be honest because I didn’t think I’d like it! Cauliflower is probably my least favourite vegetable and I thought that meant I wouldn’t enjoy this, but it actually doesn’t taste anything like cauliflower…who knew?!?!? Instead the cauliflower just acts like a dough, when mixed with the egg, and with the right balance of seasoning it tastes superb! What’s more is it’s actually incredibly easy and quick to make. I was under the distinct impression that it would require hours of drying out cauliflower to make some complicated dough but I had this prepped and cooked in just 30 minutes, less time than it’d take a takeaway to arrive!

One of my new year’s resolutions is to eat more speed food and this is one fantastic way to do it without feeling like you’re eating endless salads and piling your plate up with mounds of vegetables. Instead you get to enjoy a proper pizza without a single shred of guilt! Moreover, cauliflower is an excellent source of vitamin C, vitamin K, fibre and just about everything else good for you so it’s a particularly good one to be experimenting with!

This recipe is ideal for SP days, where you just eat speed and protein (along with your Healthy Extra A and two Healthy Extra B choices) because it’s a filling and above all satisfying choice! Don’t feel like you need to eat rabbit food all day when you’re doing SP, because you’ll likely get hungry and bored and that’s a recipe for failure. Keep your food choices interesting and filling and you’ll have a much better chance at an even better weight loss at your next weigh in! As I say, I’m trying to eat more vegetables this year because my weight loss has all but stopped and over Christmas it has gone up rather dramatically. I feel like I’ve lost my mojo and I’ve got to stop messing around now! I know that that’s something that lots of people go through after the festive period, however if I’m totally honest with myself I’ve not bee fully on plan for months. For a year now my weight loss has fluctuated within the same stone and I’ve been struggling. I have set myself three very clear goals for 2017 and one of them is to reach my target weight, hopefully sooner rather than later! I’m far too self aware to continue on in the way I am at the moment, so it’s back to basics for me and healthy, syn free and high speed meals are the best place to start!

You can top your cauliflower pizza with anything you want, I went for more veggies and kept it simple with some parsley and melted mozzarella and it was delicious. I also topped it with my Syn Free Pizza Sauce, which I always have in the fridge for just such an occasion. You can whip up the pizza sauce whilst your cauliflower is microwaving and cooling so it doesn’t add any extra time to the recipe but does add even more speed food for your meal!  You can find the recipe for my Syn Free Pizza Sauce here, so I haven’t included it in detail below.

Easy Peasy 30 Minute Cauliflower Pizza

A quick, seriously easy and delicious pizza alternative!

Ingredients

    For the Base
  • 1x Cauliflower Head
  • 1x Egg
  • 1tsp Mixed Herbs
  • Salt & Pepper (to taste)
  • For the Toppings (as per pictures shown)
  • 40g Grated Mozzarella
  • Syn Free Pizza Sauce (see above for recipe link)
  • Sliced Red Pepper
  • Roughly Chopped Parsley
  • Salt & Pepper (to taste)

Instructions

  1. Preheat your oven to 190 degrees.
  2. Grate your cauliflower into a heatproof bowl using a fine grater, microwave for four minutes. Allow to cool until you can touch the cauliflower without being hurt.
  3. Transfer it into a clean tea towel and squeeze it tightly until all of the water is drained away, you need it to be as dry as possible.
  4. Put it back in the bowl and mix with the rest of the base ingredients.
  5. Tip onto a baking tray with a piece of baking paper on top, and using a spoon or your hands press it into a rough pizza shape.
  6. Bake the base for 10 minutes or until it is golden brown (it will likely catch a bit at the edges, this is normal) and can slide around on the baking paper easily.
  7. Top and bake for a further five minutes until the cheese is melted.
  8. Enjoy straight away!

    Hello Cliona, Ive made a cauliflower pizza once and it stuck to the pan and i haven't got round to trying it again, so am glad to find your recipe that sounds a lot more easier to make too. #SimplySeasonal

      Hi Shaheen, thanks so much for commenting! I'm so glad to hear that this is easier than the ones you've found before! I wanted to make it as simple as possible as I was so put off all of the super complex ones! Just make sure you squeeze as much water out as you can and don't make it too too thin and you should be fine! Decent baking paper too and Fry Light are always your friends! ? enjoy! X
