Syn Free Slimming World Hunters Chicken

If you enjoy cheese, BBQ sauce and bacon as much as I do, then this Syn Free Hunters Chicken is for you! If you’re in the mood for comfort food, then it’s probably time to melt some cheese and get stuck in. Not only is this dish syn free, but it’s super easy, satisfying and delicious.

 

Hunters Chicken Needs BBQ Sauce…

BBQ sauce from a bottle is synned, and that simply won’t do for a syn free Hunters Chicken…obviously! That’s why, for this recipe, you make your own BBQ sauce. It is tangy, sweet, delicious and easy to make. Best of all, it’s a much healthier BBQ sauce than you would ever find in a bottle and as such goes perfectly with this syn free chicken dinner.

Not only that, but it also adds speed food to your dish which is never a bad thing! You may be feeling some trepidation about whether or not you can switch from your traditional bottled BBQ sauce but I promise you, if you try this you won’t regret it one bit!

I like to bake my syn free Hunters Chicken in individual dishes to ensure that they remain syn free and that each portion is easily served up. If you prefer, you can bake them together which works perfectly if you’re looking for a quick dinner for the whole family or if you’re meal prepping for the week ahead.

Can Syn Free Hunters Chicken Be Frozen? 

If you are looking to meal prep this delicious syn free dinner, then go right ahead! However, my suggestion would be to leave off the cheese when you cook them ahead of time and add it on when you reheat at a later date. 

If you are cooking more than a couple of days in advance, you can absolutely freeze this recipe. Simply make sure that you defrost completely before reheating and that your dish is piping hot all the way through before serving.

Bit On The Side… 

Whether you’re serving them up individually (super cute if you’ve got people round for dinner!) or making a big cheesy load of them together, one thing’s for certain and that is that Hunters Chicken goes great with chips! Oven baked chips are syn free on Slimming World, I make mine like this for the perfect crispy finish every time.

My crispy oven baked chips were the perfect side dish for this mouthwatering syn free meal. Even better, the BBQ sauce goes great with the chips and you’ve got plenty of sauce for dipping which basically means you’re winning at life with this meal!

Obviously you need to make sure you’re eating plenty of speed food too, so your Hunters Chicken should also be accompanied by a healthy helping of whichever speedy veg you fancy. I went with broccoli, a firm favourite in my house, which was also pretty great for dipping!

How To Make Syn Free Hunters Chicken

Whichever way you look at it, anything that involves tender chicken, topped with salty bacon, drenched in homemade BBQ Sauce and covered in cheese is going to be delicious, it’s just a miracle that Slimming World allows you to enjoy all of that and still lose weight. Sometimes it might feel hard to believe, but it works and I’m not planning on questioning it any time soon, that’s for sure!

A tender chicken dish covered in homemade syn free BBQ Sauce and melted cheese!

Ingredients

  • 2x Chicken Breasts
  • 4x Bacon Medalions
  • 70g Grated Cheddar Cheese
  • Syn Free BBQ Sauce (see recipe below)
  • For the BBQ Sauce
  • 1x Tin Tomato
  • 1tbsp Tomato Puree
  • 1tbsp Balsamic Vinegar
  • 2tbsp Worcestershire Sauce
  • 1tsp White Wine/Apple Cider Vinegar
  • Juice of Half a Lemon
  • Salt & Pepper (to taste)
  • 2tsp BBQ Seasoning

Instructions

  1. Preheat your oven to 180 degrees.
  2. Add all of the ingredients for the BBQ sauce into a small saucepan and bring to the boil. Reduce the heat and simmer for 5-10 minutes.
  3. Take the sauce off the heat and blend the sauce using a hand blender .
  4. Layer a few tablespoons of BBQ sauce into each baking tin , add the chicken and layer the bacon over each equally.
  5. Spoon over the rest of the BBQ sauce and then cover each with half of the cheese.
  6. Bake for 20 minutes, or until the chicken is cooked through.
  7. Serve immediately with your choice of sides!

    Not sure what happened with mine! But at the 20 minute mark my chicken was still very raw, would of had to leave it in for at least an hour!

      Hi Natalie, that is very odd! Of course you should always cook for as long as needed to cook through and all ovens are different, 20 minutes is usually sufficient to cook the average chicken breast but of course if you check it and it is still too raw then you should leave it in longer!

      Hi Chris, I don't know the calorie content for my recipes I'm afraid as that's not the basis that Slimming World works on, however you can of course work it out using the ingredients list if you do want to count calories :)

    Hi Cliona If I half cooked the chicken first would it be better because my electric oven always seems to take longer than others it a brand new oven .

      Hi Liz, what I'd advise is making the BBQ sauce and then freezing it in a zip lock bag with the chicken. You can then defrost and add the cheese on when it goes in the oven!

    Hi when you say freeze it with the sauce is that raw chicken and the sauce cooled down? Can u keep the sauce chilled? If so for how long ? I work all week and I am looking for meals I can prep and keep in the fridge rather than freeze as it takes forever to defrost? Thanks

      Hi Julie, I would definitely let the sauce cool down before freezing. You can also keep the sauce chilled. I can't give you an exact fridge life for the sauce but I've kept it in the fridge for up to a week before and used it still. Hope that helps!

    have to say neither of us are slimming as we're beyond redemption lol, we get food bored so tried this recipe. Was absolutely amazing so keeping. Have to say though didn't use BBQ seasoning used 2 tblsp of honey BBQ sauce. Chicken took longer on gas mark 6 but they were large breast fillets (that's where the instant read thermometer comes in handy). Thank you very much will defo make this time and time again. x

      Hi Nicole, I'm so glad you like it! I'd add some time on to the cooking length but can't advise exactly how much. Maybe try 10 minutes extra and then check to see if they're cooked through. It might take some trial end error to find the perfect length of time in the oven though, so checking as they bake is the best option. Enjoy!

    I think the oven set at 180 degrees can’t be Fahrenheit which is why some are not cooked thoroughly. It would be helpful to specify that in the recipe. It’s probably close to around 350 degrees Fahrenheit.

    Made this the other day. We loved it. Will be a regular on our menu now. I buy free range chicken which is good if you can afford the price. I didn't have bbq seasoning so I used smoked paprika which I use quite a lot because I just love it. I also used reduced fat mature cheddar. Delicious. I made slimming world chips to go with it along with some fresh green vegetables.

    I make this on a regular basis, and my husband loves it!! Though last night I found that I had run out of BBQ Seasoning, so a quick think and I used Moroccan Seasoning instead. Equally yummy. And half the sauce has gone into the freezer for the next time. An easy, quick, tasty and versatile recipe. Yum!!
