Easy Peasy Homemade Healthy Fish Pie

Fish pie is a classic recipe and in my house it was something I remember my mum making throughout my childhood! I decided to make this delicious Healthy Fish Pie when I was asked to discover the #PowerOfFrozen by Iceland Foods by trying their amazing range of frozen fish. In the past I’ve only ever cooked recipes like this using fish from the fridge section of the supermarket, but the more I thought about it the more using frozen fish made sense!

Eating frozen food can dramatically decrease your food waste which is something I’m always conscious of, particularly when it comes to saving money. For just £10 I got three bags of the frozen fish (cod, haddock and salmon) with four fillets in each so I had loads left over in the freezer after making this, then it was just the frozen prawns and a few additional ingredients from the fresh produce isles. Using the frozen fish also locks in flavour, improving the taste of your dish and keeps the fish tender when cooked, improving the texture.

What’s more, freezing the fish keeps it fresh and stops any nasty bacteria getting in and contaminating the food. Moreover, because I used frozen fish from Iceland, I also used the opportunity to stock up on some of their tasty Slimming World ready meals for those days where I just don’t have time to cook! When Iceland released their Slimming World range I thought I’d died and gone to heaven, because they taste great and have been a total lifesaver time and time again. Ingredients

  • 2x Frozen Haddock Fillets from Iceland
  • 2x Frozen Cod Fillets from Iceland
  • 2x Frozen Salmon Fillets from Iceland
  • 1x Bag North Atlantic King Prawns (or similar)
  • 400g Frozen Peas
  • 6x Large Potatoes
  • 1x Egg
  • 700mls Skimmed Milk
  • 2tbsp Cornflour or Ground Arrowroot
  • 1tsp Mustard Powder
  • 1tbsp Fresh Dill (finely chopped)
  • Salt & Pepper (to taste)
  • Fry Light

Instructions

  1. Preheat your oven to 180 degrees.
  2. Peel & chop the potatoes and boil them until they're soft. Before draining the water, place the frozen salmon fillets in the boiling water in their plastic casings for 1 minute. Drain the water.
  3. Mash the potatoes,add salt and pepper and then crack in the egg and mash it into the potato straight away to make it nice and creamy. Set the mash to one side.
  4. Over a medium heat, add the milk making sure to reserve about 200mls.
  5. Mix the reserved milk with the cornflour and add to the milk. Whisk over the heat continuously.
  6. Add the mustard powder and dill and continue to whisk until it is thickened. Set aside.
  7. Remove the salmon fillets from their plastic packaging and easily peel off the skin.
  8. Slice the haddock, cod and salmon fillets into large chunks and mix together with the frozen prawns.
  9. Tip into a large ceramic dish and distribute evenly. Pour over the sauce and give the dish a little shake to distribute the sauce, then distribute the frozen peas over the top. Use a spoon to push the peas into the filling.
  10. Spoon the mashed potato over the top of the pie and flatten it across with a fork making sure to seal it around the edges. You may get a bit of over spill but don't worry.
  11. Bake for 35-45 minutes and serve hot with plenty of extra veg!

Notes

2 syns for the whole fish pie when using the Skimmed Milk as 1/3 of your Healthy Extra A per serving. Serves 6. 2 divided by 6 = 0.3 syns per serving. If you aren't using the milk as your HexA the pie is 2.3 syns per serving.

    Frozen foods are great as long as you are skipping the microwaveable burritos and processed food. This looks great. Comfort foods from my childhood weren't always the healthiest options so it's great when a comfort food can still be enjoyed without hurting your health!

    My kids really love fish pie (well two of them do, of course there has to be one who doesn't like it!) and I make a very similar version to this. I like that it gets a portion of veg in as well. Will have to try your slightly healthier version some time x
