This isn’t doing us any favours when it comes to our health, which is why delicious and healthy ‘Fakeaways’ are the answer to many of our problems! Between cheap chocolate and cheaper Chinese I find myself facing constant temptation, something which I often find it difficult to ignore. What Makes This Healthy Chicken Tikka Masala Healthy?

If you look up recipes for chicken tikka masala online you’ll often find that they’re full of high fat cream, lashings of oil and not much veg. That might be tasty but it’s not healthy and certainly not Slimming World friendly! This version packs all the same flavour and richness of its high fat alternatives, but is made with low fat yogurt and has no oil in whatsoever and it’s packed with some delicious red peppers for the extra health kick!

You can make a healthy chicken tikka masala because the fat and oil aren’t what gives this dish it’s delicious flavour! It’s high impact comes straight from the variety of delicious spices that go into it. You can of course buy ready made curry powder but it’s much more fun to make your own!

Making A Marinade

To make a good chicken tikka masala you have to marinate your chicken to make sure it takes up all of the delicious spice flavour. The longer you marinate something for, the more flavour it’s going to have when you eat it! You should therefore marinate the chicken for AT LEAST 2 hours if you can, but if you plan ahead and have a spare moment the day before or in the morning before you head to work then spend 5 minutes whipping up a marinade and mix in the chicken to leave in the fridge. Trust me you’ll thank me later 😉

Making Homemade Healthy Chicken Tikka Masala

Homemade Healthy Chicken Tikka Masala

A delicious healthy curry, full of flavour and easy to make! Syn free on Slimming World.

Ingredients

    For the Marinade
  • 6tbsp Fat Free Greek Yogurt
  • 3tsp Ground Cumin
  • 3tsp Ground Coriander
  • 3tsp Chilli Powder
  • 2tsp Gram Masala
  • 1tsp Tumeric Powder
  • 1tbsp Minced Garlic
  • 1tbsp Minced Ginger
  • 1x Lemon (juice only)
  • For the Curry
  • 4-5x Chicken Breasts (cut into chunks)
  • 2x Red Peppers (sliced)
  • 1x Onion (grated/minced)
  • 1tsp Ground Cumin
  • 1x Red Chilli (seeds removed, chopped up)
  • Leftover Marinade
  • 150mls Water
  • 2tbsp Tomato Puree
  • 1/2 Can Chopped Tomatoes
  • Fresh Coriander (to garnish)
  • 1tsp Fat Free Greek Yogurt (to garnish)
  • Fry Light

Instructions

  1. Mix all of the marinade ingredients together and add the diced chicken. Cover with cling film and leave to marinate in the fridge for at least 2 hours (longer if you can.)
  2. When the chicken has marinated, preheat the oven to 180 degrees.
  3. Spray a baking tray with Fry Light.
  4. Skewer the chicken breast chunks and lay them on the baking tray. Bake for about 30 minutes or until the chicken begins to char slightly and is cooked through. Set the leftover marinade to one side.
  5. Meanwhile, fry the red peppers in Fry Light and then set aside to add in later.
  6. Spray the pan with more Fry Light and add the minced onions, stir for a minute or so and then add the cumin and continue to stir.
  7. Take your leftover marinade and mix it with the water. Pour into the frying pan. Simmer until it begins to thicken.
  8. Add the tomato puree and stir it in. Then add the tinned tomatoes and simmer for another few minutes.
  9. Once the chicken is cooked, remove it from the skewers and add it into the curry liquid. Stir until coated.
  10. Add in the red peppers and stir again.
  11. Serve hot over some wild rice and garnish with fresh coriander and a dollop of Greek yogurt.

    I love using Greek yogurt for a marniade. Makes the chicken extra flavorful. This take on healthy tikka masala has me putting the ingredients on my shopping list right now so I can make this immediately. Looks absolutely delicious!

    We definitely need more "fakeaway" recipes in the U.S. as well! I adore chicken tikka masala, and have almost always made it using yogurt: I with you 100% there, since the flavor doesn't come from the cream (and, in fact, the yogurt imparts a subtle flavor that's quite nice!). Not to mention that yogurt is fantastic for marinating. I can't wait to give your version a try!
