A tweak, simply put, is something which uses a free food in a way that it isn’t meant to be used in place of a non-free food. Whilst this does technically do that, it uses the smash as part of a main meal with plenty of protein and veg, making it balanced an means that you’re not in danger of overeating this particular free food substitution. So long as you eat this as A MAIN MEAL, this recipe is NOT A TWEAK! Slimming World specify examples similar to this on their website so you really don’t have to worry!

Ingredients

    For The Chicken
  • 2x Chicken Breasts
  • 6tbsp Smash Instant Mashed Potato
  • 2x Eggs
  • 1tsp Sesame Seeds (plus extra for garnish)
  • 1tsp Chilli Flakes
  • 1tsp Powdered Stock (chicken/vegetable)
  • Salt & Pepper (to taste)
  • For The Sauce
  • 4x Spring Onions (sliced thinnly)
  • 3x Cloves Garlic (minced)
  • 1x Fresh Red Chilli (diced small)
  • Fry Light
  • 4tbsp Dark Soy Sauce
  • 3/4 Pint Chicken Stock
  • 1tbsp Honey
  • 1tsp Sesame Seeds

Instructions

    For The Chicken
  1. Preheat your oven to 180 degrees.
  2. Mix together the Smash, sesame seeds, chilli flakes, powdered stock and salt & pepper.
  3. Dice the chicken into chunks and set aside.
  4. Whisk the two eggs together.
  5. Spray a large baking tray with Fry Light.
  6. One by one dip the chicken pieces into the egg and then into the Smash mix, making sure they're covered all over. Place them separately on the baking tray. Spray with Fry light.
  7. Once all of the chicken is done, bake until crispy (aprox 15-20 minutes)
  8. For The Sauce
  9. Over a high heat spray a frying pan with Fry Light and add the spring onions, garlic and chilli to stir fry.
  10. Add the soy sauce and chicken stock, then add the sesame seeds and honey.
  11. Reduce heat and simmer until thickened.
  12. Once the chicken is cooked add it to the sauce and stir until every piece of chicken is coated.
  13. Serve over sticky white rice and fresh steamed vegetables!

    Just wondering, would this be ok to make in advance and freeze? I prefer to batch cook to make my life easier during the week when I'm at work!

      I think it would be OK although I've never tried it myself so I can't guarantee! I can't see a reason why it wouldn't be OK though :)

    Gorgeous recipe! I could scoff a big bowl of these. I am a huge fan of the fakeaway, I am forever making my own curries, Chinese dishes, pizzas etc. They are so much healthier than takeaways - and way nicer AND cheaper! And I can usually make them in the time it takes to have one delivered, anyway! What's not to like? Eb x

    What soy sauce do you use? I made this last night, using 4tbsp of dark soy sauce like said and the soy sauce was way overpowering and I couldn’t eat it. Any help would be very much appreciated!

      I usually use the Kikoman Soy Sauce but it varies depending on what I have in the house. If you find the soy sauce a bit overpowering then I would switch to a lighter soy sauce in the future :) hope that helps!

    I made this tonight but the sauce wouldn’t reduce?! Any ideas ? Flavours great but obviously not sticky :(

      Hi Jodi, it can take a while! If it isn't you might need to add a bit more honey :)

    I have just made the Sticky Chicken for dinner and the whole family loved it...I had to add an extra tablespoon of honey to thicken the sauce but absolutely scrumptious....thank you for a great Slimming World recipe we can all eat and enjoy with no complaints!!!
