Syn Free BBQ Pulled Pork (Instant Pot/Stove Top)

A Slimming World Dinner Choice
This recipe for Syn Free BBQ Pulled Pork is one to put on your Slimming World meal plan for sure! You can add it to other recipes (watch this space for some more ideas in the coming weeks!) or serve it up with plenty of veg and some potatoes – whatever takes your fancy!
To cook this recipe you need to use either pork tenderloin or a pork shoulder joint. Tenderloin will already be trimmed of any fat, so you don’t need to worry about making it syn free, whereas pork shoulder will most likely come with a layer of fat on the outside. If you’re using the second option, you simply need to trim as much of the visible fat from the pork as you can before using it in this recipe.
All of the other ingredients used are totally syn free already so you don’t need to worry about any calculations or working out syn values. Just pop it all in the slow cooker, wait for a few hours and serve up to your delighted family and friends.
Alternatively, you can portion it out into your daily meals or Tupperware it up in the fridge or freezer to use later! If you do freeze it, simply make sure it is totally defrosted before reheating it all the way through.
How To Cook Syn Free BBQ Pulled Pork – Step by Step
This recipe for Syn Free BBQ Pulled Pork can be cooked using a slow cooker, Instant Pot (as I have done) or simply in a large pan on the stove top. The difference between the three are as follows:
- Slow Cooker – you can leave it to cook but will need to reduce the sauce on the stove before adding it to the pulled pork
- Stove Top – as with the slow cooker, you can leave it to cook with a lid over a low heat but you will need to check it to make sure the heat isn’t too high and you will also need to reduce the sauce in a separate pan before adding it to the pulled pork
- Instant Pot – unlike the other two, you can use the Instant Pot to slow cook this recipe as well as reducing the sauce once you have removed the chunks of pork. This is because an Instant Pot has multiple functions, including slow cook and saute.
With all three options you simply need to transfer the BBQ Pulled Pork over to a baking tray to crisp up in the oven – although this is an optional step!

Step One
To season the pork, mix the spices together and then rub them all over the pork. Leave to marinate if you can, or use straight away if you can’t. The longer you marinate the pork, the more the flavour will sink into the meat.
Step Two
Add the sliced onions and parsley into your Instant Pot/Slow Cooker/Sauce pan.
Step Three
Add your spiced pork along with the passata, garlic, tomato puree, water, balsamic vinegar, Worcestershire sauce, soy sauce and all of the other spices.
Mix together so everything is coated.
Step Four
Cook on high for 4 hours, or low for 5-6 hours. Once done, your pork should be ready to fall apart.

Step Five
Once your pork is cooked, remove it from the Instant Pot/Slow Cooker/Saucepan and put it in a large baking tray.
Step Six
Reduce the remaining sauce until it has thickened. This can be done in the Instant Pot on ‘Saute’ mode or in a pan on the stove.
Step Seven
Meanwhile, use two forks or bear claws to shred the cooked pork in the baking tray. You can buy bear claws on Amazon, and they make making pulled meat recipes so much easier!
Step Eight
Spoon over the BBQ sauce gradually, stirring it through as you go. It is up to you how ‘saucy’ you want to make your Syn Free BBQ Pulled Pork.
Store any leftover sauce to use another day.
Step Nine
Bake the Syn Free BBQ Pulled Pork in the oven until it starts to crispy up slightly and the tips of some pieces begin to catch.
This gives it a lovely texture but is an optional step if you would prefer to use it straight away.

- 3tsp Smoked Paprika
- 1tsp Chilli Powder
- 1tsp Cumin
- 1tsp Salt
- 1x onion (sliced)

- 2tbsp tomato puree
- 200ml water
- 1tbsp sweetener
- 2tbsp balsamic vinegar
- 3tsp Worcestershire sauce
- 2tbsp Soy Sauce
- 2tsp garlic powder

- 2tsp chilli powder
- 1tsp mustard powder
