Pumpkin Spice Apple Overnight Oats
I’m in full pumpkin spice mode right now in preparation for all things Autumn, and my new recipe for Pumpkin Spice Apple Overnight Oats has it all! Perfect for keeping your healthy eating on the straight and narrow as the weather gets colder this will fill you up for hours, because it’s packed with protein and slow release carbohydrates to keep your energy levels up.
What Are Overnight Oats?
If you’re unfamiliar with the concept of overnight oats then you’re in for a treat! Have you ever been so rushed in the morning that all you’ve had time for is a piece of toast or failing that an on the go cereal bar? If you have, you’ll know that a breakfast like that simply isn’t enough to sustain you until lunch, making it much more likely that you’ll fall prey to cravings! Overnight Oats are, as the name suggests, made the night before, removing all need for that morning panic!
You layer your oats, yogurt, flavourings and fruit up then night before and in the morning you have a fresh tasting breakfast that you don’t even need to think about! There is some controversy when it comes to how to make overnight oats, as some people like to leave the layers to soak gradually overnight, and others like me prefer to mix and leave in order to make sure the oats are fully soaked. It’s up to you what you do, but I would say that if you are going to leave the layers then adding a bit of milk to give that extra bit of moisture might be a good idea!
Are These Pumpkin Spice Apple Overnight Oats Slimming World Friendly?
Overnight oats are a very popular breakfast for those following Slimming World, as they give you a no fuss, delicious breakfast option which uses your Healthy Extra B and keeps you full up for ages! This recipe is no different, it’s perfect for Slimming World and uses just one syn for the honey. If you’d prefer to make it totally syn free you can use a flavoured syn free vanilla yogurt (e.g. a Muller Light), instead of the plain yogurt I’ve used in the recipe below!
Pumpkin Spice Everything!
I’m a bit late to the pumpkin spice band wagon, but this year I intend to get fully behind it! Pumpkin Spice is essentially a mix of all of my favourite spices – cinnamon, nutmeg, cloves, allspice & ginger – and almost sings of autumnal enjoyment and Christmas! You don’t technically need pumpkin puree for a pumpkin spice recipe (see my Healthy Dairy Free Pumpkin Spice Latte) but I’ve included it in this recipe for a number of reasons! Not only does pumpkin puree add so much flavour to the recipe, it also adds essential nutrients and filling power!

A fantastic autumnal Overnight Oats recipe made with pumpkin spice, pumpkin puree and chopped apple

Ingredients
- 35g Porridge Oats
- 4tbsp Fat Free Plain Yogurt (or fat free vanilla yogurt if you don't want to add honey)
- 3tbsp Pumpkin Puree
- 1tsp Cinnamon
- 1/4tsp Nutmeg
- 1/4tsp Allspice
- 1/4tsp Ground Cloves
- 1/3tsp Ground Ginger
- 1tsp Honey
- 1x Apple (chopped into small pieces)
Instructions
- Layer the oats and yogurt at the bottom of your jar.
- Add the spices and honey & then add the pumpkin puree.
- Add half of the apple and sprinkle a bit more cinnamon on top.
- Mix together and then add the rest of the apple.
- Seal the jar and pop it in the fridge overnight.
- Enjoy the next morning!
Notes
1 syn for Honey. Uses your Healthy Extra B on Slimming World. Count 6 syns for oats if you aren't using your Healthy Extra B. Syn values correct at time of writing. Please do not share screenshots of this recipe!
