Healthy 20 Minute Creamy Cajun Spiced Pork

Easy Peasy - 20 Minute - Creamy Cajun Pork - Slimming World - Low Syn - Dinner - Recipe - Healthy - Cajun

One of my favourite ever recipes is my Syn Free Cajun Chicken Pasta, and it just happens to be the most popular recipe I’ve ever created. This got me thinking about what other Cajun recipes I could get to making (I’ve since made a few) and this delicious Creamy Cajun Spiced Pork is definitely one to compete against the Cajun Chicken Pasta! With a creamy sauce, tender strips of pork, loads of delicious veggies and steamed white rice it really couldn’t be any more delicious…the best part is, it’s healthy too!  Continue Reading…

Slimming World KFC Double Down Burger

Slimming World KFC Double Down Burger - Double Down Burger - Slimming World - Healthy - Fakeaway - Imitation

Unless you’ve been living under a rock in recent weeks, you’ll have seen that KFC have launched the Double Down Burger into the UK. Inevitably, as it’s only in stores for a limited time only, everyone seemed to go crazy for it and if I’m totally honest I went out and bought one…purely for research purposes…honestly 😉 Anyway, having tried it for myself and confirmed that yes, bacon and BBQ sauce sandwiched between two fried pieces of chicken is as good as it sounds, I decided to help myself avoid any future trips down fast food alley and create this Slimming World KFC Double Down Burger as a healthy and delicious alternative for any slimmers out there!  Continue Reading…

Roasted Carrot and Coriander Soup

Roasted - Carrot and Coriander Soup - Healthy - Slimming World - Syn Free

There are many reasons why I like cold weather, and although the fact that I can wear tights again (bye bye thigh chafing!) and that I can comfortably wear black all of the time are up there, my number one thing about winter is soup! Specifically homemade soup, because there are very few things that warm you up on a cold, raining day in the UK more than a hearty bowl of home cooked soup. This Roasted Carrot and Coriander Soup is the perfect autumn/winter recipe, which is packed full of flavour and takes just 3o minutes to make!  Continue Reading…

Best Ever Homemade Healthy Swedish Meatballs

Best Ever - Healthier -Swedish Meatballs - Recipe - Low Syn - Slimming World - Healthy - Ikea Copycat - Low Fat

I was lucky enough to go to Sweden recently on a very fun girly holiday with my mum and sister, and if you’ve never been I can’t recommend it enough! We went to Stockholm and out to the Archipelago which were simultaneously beautiful and fascinating. One thing that I was dead set on giving a go whilst there was Swedish Meatballs, which seem to have become something of a cult classic outside of this beautiful country due to their association with Ikea. I had the pleasure of enjoying a traditional Swedish Meatballs meal on one of the Archipelago and vowed then and there to give it a go myself at home! Continue Reading…

Best Ever Lemon & Herb Roast Chicken

Best Ever - Lemon and Herb - Roast Chicken - Recipe - Slimming World - Roast Dinner - Healthy - Roast

Do you ever have one of those recipes that you cook and then obsess over for a full week afterwards? This was one of those for me! I think I probably told everyone I saw for a good seven or eight days about it because I was so pleased (and frankly amazed) at how well it turned out. Think tender, juicey, fall off the bone, roast chicken, infused with garlic-y lemon and herb goodness and encased in a crispy skin which is essentially a meal on its own! Is your mouth watering yet? I know mine is just remembering! Continue Reading…

Easy Peasy Slow Cooker Burrito Bowl

Easy Peasy - Slow Cooker Burrito Bowl - Instant Pot - Recipe - Slimming World - Syn Free

I’m a huge fan of all things Mexican, especially the food, and burritos have always been a firm favourite at my house. This Slow Cooker Burrito Bowl recipe is a healthier take on a classic, and is slow cooked in an Instant Pot, making it oh so simple! To keep this super healthy I’ve made it without cheese, but I’ve added that in as an optional extra in the ingredients if you want to add it yourself. Continue Reading…

Crispy Roast Potato & Bolognese Bake

This recipe came together when I was staring into my all but empty fridge, trying to come up with something different to eat. I knew I had some mince in the freezer and my first thought was to make a delicious pasta bolognese, however I’ve eaten a lot of pasta recently and didn’t fancy something so heavy, so I got to thinking. That’s how I put together this Crispy Roast Potato & Bolognese Bake, which combines a rich bolognese sauce, packed with vegetables, with crispy herb covered potatoes, pulled together with a touch of tasty melted cheese. Gorgeous! Continue Reading…

No Waste One Pan Gammon & Bean Bake

No Waste - One Pan Gammon & Bean Bake - Iceland Foods - Slimming World - Syn Free - Healthy - Money Saving Recipe

Did you know that UK households waste a massive 7 MILLION TONNES of food every single year? That works out, according to the government agency WRAP, at a loss of £700 per family on average. Just think of what we could all do with that extra £700 each if we simply made an effort to reduce our food waste? Personally it’d go towards a deposit on a house, but you could go on holiday, get a dog, or just put it away for a rainy day. Whatever you’d do with the money, the fact remains that it is ridiculous that we waste so much, something with Iceland believe too, which is why they’ve asked me to come up with a recipe using their food which not only tastes amazing but shows exactly how far one meal can go and how easy it is to reduce waste and save money when cooking! This blog post for my No Waste one Pan Gammon &  Bean Bake doesn’t only give you one recipe, but if you scroll further down gives you TWO MORE recipes for how to use your leftovers and reduce your household waste.  Continue Reading…
