I recently shared an old recipe for Loaded Hasselback Potatoes on Facebook, and they went down a treat! It got me thinking what else I could do with a Hasselback potato, and that’s where these Syn Free Garlic & Parmesan Hasselback Potatoes were born. They’re a lighter recipe than the original inspiration (which are all melted cheese and tasty bacon) but they pack just as much flavour, texture and happiness. They’re the perfect accompaniment to any meal and are without doubt something that the whole family can enjoy totally guilt free!

Syn Free Garlic & Parmesan Hasselback Potatoes – A Slimming World Friendly Side Dish

These Syn Free Garlic & Parmesan Hasselback Potatoes are the perfect way to enjoy potatoes on Slimming World. They can be paired with any meat or vegetarian dish (just make sure you find veggie friendly parmesan if you need to!) and they’re the ideal way to use one of your Healthy Extra A choices.

All of the ingredients in this are syn free, as long as you are using your Healthy Extra A choice, which you’re now allowed two of every day on Slimming World! That means you don’t have to choose whether to enjoy these or have milk in your tea, you can do both. I’ve made this recipe with eight potatoes, so depending on how hungry everyone is you can either split it between two or four people. If split between two people then each serving counts as a full Healthy Extra A portion and split between four then each serving is half of a Healthy Extra A choice. 

If you have picky eaters who don’t like garlic (like crazy people) then you can leave it out of the recipe if needed. However it really does add the flavour you’re looking for! If you are substituting any ingredients, make sure to compensate with plenty of herbs and a little bit of extra salt to make up for any lost flavour.

How To Make Syn Free Garlic & Parmesan Hasselback Potatoes – step by step 

If you’d like the condensed recipe, simply scroll down and find it towards the end of this post. Here are the step by step instructions you need to serve up this delicious side dish!

Step One 

Pick and wash eight Maris Piper potatoes and slice each of them at about 5mm intervals along their width. Make sure not to cut all the way through, leaving about a centimetre of uncut potato at the base to keep the whole thing together. An easy way to do this is to place your potato on a large serving spoon and cut until the knife hits the spoon.

Step Two

Mix together 60g of grated parmesan cheese (two Healthy Extra A portions) with three finely chopped garlic cloves, two teaspoons of dried parsley, two teaspoons of fresh, chopped rosemary, one teaspoon of salt and half a teaspoon of pepper.

Step Three

Spray a baking tray with low calorie cooking spray, and spray all of your potatoes too. Rub the cooking spray over the potatoes so that they are all covered. Sprinkle the parmesan mixture over each potato evenly, making sure to get plenty in between the slices.

Step Four

Cover the tray with tinfoil and bake the potatoes in a preheated oven at 190 degrees for 30 minutes. Uncover and bake for a further 25-30 minutes, or until the potatoes are cooked through and crispy on top.

Ingredients

  • 8x Maris Piper Potatoes
  • 3x Garlic Cloves (finely diced)
  • 60g Parmesan
  • 3tsp Dried Chopped Parsley
  • 3tsp Fresh Chopped Rosemary
  • 1tsp Salt
  • 1/2tsp Black Pepper
  • Low Calorie Cooking Spray

Instructions

  1. Using a spoon to prevent you cutting all the way through, slice each potato along its width at about 5mm intervals.
  2. Spray a baking tray with low calorie cooking spray and evenly space out your potatoes. Spray each one with cooking spray, rubbing it in to make sure they are fully covered.
  3. Finely chop your garlic and rosemary and mix it with your dried parsley and the Parmesan, salt and pepper.
  4. Sprinkle it evenly over the potatoes , making sure that mixture gets between the slices.
  5. Cover with tinfoil and roast for 30 minutes. Remove the tinfoil after 30 minutes and roast for a further 25-30 minutes, or until the potatoes are crispy on top and cooked through.
  6. Best served hot but can be reheated if needed.
