Best Ever Low Syn Banana Bread
Growing up I was never much of a fan of cake, I even used to opt for a Baked Alaska instead of birthday cake every year, but there was always one kind of cake that I totally adored… banana bread! Nowadays I enjoy most cakes but banana bread still has a special place in my heart, especially as it was the first cake I ever remember making on my own. However, when you’re trying to be healthy and stick to the Slimming World plan, banana bread can seem like a million miles away! That’s why I’ve come up with this Best Ever Low Syn Banana Bread recipe, to keep syns low whilst keeping hold of everything that I love most about banana bread.
A Proper Cake for Tea Time
When I first started Slimming World, what feels like a million years ago now, I tried out a lot of the traditional Slimming World cake recipes. Most of these seemed to consist 90% of whisked egg white and very little flavour, and frankly, I was never a fan. For me, if you’re going to bother using some of your syns on a tasty cake, it really should be cake! Whisked egg whites have their place in baking, but a real cake needs more ingredients to make it worth eating!
This Low Syn Banana Bread is, therefore, not one a recipe that includes 12 eggs and nothing else, it’s a proper bake which has been carefully balanced to create a low syn option to enjoy totally on plan. It’s perfect with a cup of tea with friends, or even to enjoy as a quick on the go breakfast! I like to spread a little bit of strawberry jam on mine if I’m on the go for an extra sweet boost, but it’s really up to you! It’s a delicious recipe all on its own, with a super moist texture, that doesn’t compromise on texture, flavour or quality and won’t hurt your waistline when eaten in moderation.
Slimming World Friendly Low Syn Banana Bread
As I’ve said, this is a recipe that can fit perfectly into your Slimming World plan. For just 2.5 syns per slice, you can enjoy this Low Syn Banana Bread without feeling guilty at all. It’s proof that Slimming World baking doesn’t have to be boring, and that baking, in general, doesn’t have to be unhealthy! The syn breakdown for this recipe is as follows:
140g Self Raising Flour = 22.5 syns
1/2tsp Baking Soda = 1/2 syn
2x Ripe Mashed Bananas (roughly 200g) = 8 syns
28g Dried Raisins = 4 syns
2tbsp Sukrin 1 Sweetener = 1 syn
To save you doing the maths, that equals 36 syns in total for the whole loaf. I got 15 slices out of this Low Syn Banana Bread when using a 30cm Loaf Tin (like these ones) to bake it. 36 divided by 15 works out at 2.4 syns per slice, which you would round up to 2.5 syns per slice to be on the safe side with your syn count. If you ask me, a tiny 2.5 syns for a slice of cake is not half bad! Of course, if you decide to cut thicker slices and get fewer from the loaf as a whole, make sure to adjust your calculations by dividing 36 by however many slices you have cut.

I’ve used Sukrin:1 Sweetener in this recipe. It’s my favourite granulated sweetener as it can be substituted 1:1 when replacing regular sugar. This means you don’t have to adjust your recipes and try and guess how much sweetener to use. If you are using other powdered sweeteners you will need to adjust the recipe accordingly as they can be much sweeter than normal sugar and you may need to use less.

Ingredients
- 140g Self Raising Flour - 22.5 syns
- 1.2tsp Baking Soda - 1/2 syn
- 2x Bananas (roughly 200g) - 8 syns
- 3x Eggs
- 2tsp Sweet Cinnamon
- 28g Dried Raisins - 4 syns
- 2tbsp Surkin:1 Sweetener - 1 syn
- 1tsp Vanilla Essence
Instructions
- Preheat your oven to 180 degrees.
- In a mixing bowl, combine the flour, baking soda, sweetener and cinnamon.
- In a separate bowl, mash the bananas with a fork until they are almost smooth. I like a few lumps through my banana bread but you can mash to your desired consistency.
- Whisk the eggs and vanilla essence in with the banana and then add to the flour mixture.
- Whisk until smooth and then stir in the raisins.
- Add to a loaf tin lined with baking parchment and bake for 25 minutes, or until a skewer comes out clean when inserted into the deepest part of the loaf. You may need to cover the top with tinfoil for the last 5 minutes to prevent the top burning, so check after 20 minutes.
