Chocolate and Chia Seed Pudding
Everyone’s heard of ‘Overnight Oats’ right?! Well this Chocolate and Chia Seed Pudding is like overnight oats on steroids! Sweet, chocolatey AND healthy it’s gluten free, vegan, low in sugar and fits in with a Slimming World meal plan…what’s not to love?! Just whip it up, pop it in the fridge for a few hours (or overnight if you can) and dig into a tasty treat which can be used as either a deliciously indulgent sounding pudding or a healthy breakfast!

If you ask me that’s better than spending your syns on a chocolate bar any day!
Making This Chocolate and Chia Seed Pudding ‘Free From’
I’m getting really into ‘free from’ cooking at the moment and this recipe is a prime example of that! It’s gluten free, dairy free and vegan, so basically it’s a slam dunk on the allergy friendly charts! I’m getting into cooking with free from ingredients because I’m actually going for gluten tests soon to find out whether I’ve got sensitivity to gluten or whether I might have Coeliac disease. I think the latter is unlikely, although it’s always good to know, but I suffer from IBS which we think is either being bought on by gluten or by starchy foods (not specifically the gluten part though).
I’ve made this dairy free and vegan too because it just means that many more people can enjoy it! I’ve also come to realise that many people who need to avoid gluten for medical reasons also have sensitivity or are allergic to dairy as well, so hopefully this ticks a few boxes for lots of people!
Mixing Things Up
The gorgeous thing about this Chocolate and Chia Seed Pudding is that it’s a versatile base for any number of different toppings! The recipe makes two and you can see that I topped one with strawberries, bananas and a sprinkling of granola, and the other I added blueberries and a squirt of light squirty cream! Whatever you choose to top the Chocolate and Chia Seed Pudding with just make sure to count any additional syns where necessary!
Making This Chocolate & Chia Seed Pudding
Here are the step by step instructions to make this delicious pudding/breakfast! Remember, you can add whichever toppings you like, just make sure to count any extra syns! This recipe makes two jars.

A delicious Chocolate and Chia Seed Pudding recipe, perfect for pudding or breakfast!

Ingredients
- (Makes Two)
- 50g Chia Seeds
- 500mls Light Soya Milk
- 2tsp Cacao Powder/Cocoa Powder
- 4tsp Runny Honey
- Kilner/Mason Jar
Instructions
- Divide the chia seeds in half and add to each mason jar. Add half of the soya milk into each and do the same with the cacao powder and honey.
- Put the lid on each jar and shake vigorously until the ingredients are totally combined and the chocolate is properly dispersed.
- Pop the jars in the fridge for at least 4 hours, preferably overnight.
- Enjoy with your choice of toppings!
