I made this risotto recipe for the family, and it’s packed with chicken, peppers, and mushrooms as well as healthy kale. It’s also full of flavour with a generous handful of chopped coriander and a dash of fresh lemon juice!
In my recipe below I’ve not included an actual fixed ‘recipe list’ with specific amounts, as it’s really a ‘by eye’ method and completely depends what you’d like to include, how many people you’re cooking for and how hungry they are! It’s simple, quick and oh so easy so hopefully you can pick the ingredients up from the instructions!
