Spicy Pepper and Chilli Soup

If you’re looking for a quick, simple and tasty lunch then soup is an obvious choice. But supermarket soups can often have really high amounts of sugar in them (something I’m really trying to avoid right now) so I’m personally a big fan of homemade soups. You can control what goes into them, and they can be so quick to make!

Making this soup was actually my first experience of using the NutriBullet, something which I was quite looking forward to. I’ve heard many people rave about the NutriBullet as a way to make tasty smoothies, and soups so it was the obvious choice when I decided what I was having for lunch!  

I was really impressed with the NutriBullet, so I’ll definitely be using it again soon!

Spicy Pepper and Chilli Soup

This healthy, simple soup makes the perfect lunch whether you're on the move or having a lazy Sunday at home!

Ingredients

  • 5 Mixed Peppers
  • 1 Large Tomato
  • 1/2 Chilli
  • 1 Garlic Clove
  • Mixed Herbs
  • 1tbsp Paprika Powder
  • 1.5 Litres boiling water
  • 2tbsp Chicken Stock
  • Fry Light Spray

Instructions

  1. Slice the peppers, tomato, chilli and garlic and fry together for two minutes with the Fry Light spray.
  2. Add the water, stock, herbs and paprika and leave to simmer for 15 minutes until the peppers are soft.
  3. Pour everything into your NutriBullet (or other blender) and whiz it up until it's smooth.
  4. Serve immediately or keep in the fridge to eat later!

Notes

You could add any number of herbs and spices to this soup, or even add yoghurt or cream to make it even smoother. Slimming World Syn Value = Free
