Step One
Cook your pasta as per packet instructions.
Meanwhile, fry diced onion and garlic over a low heat using low calorie cooking spray, until they become soft and translucent.
Step Two
Chop your chicken and chorizo and fry until the chicken is cooked through and the chorizo has begun to go crispy around the edges. Stir regularly to prevent burning.
Set aside.
Step Three
In the same frying pan, cook your fresh tomatoes and tinned chopped tomatoes along with the chicken stock, salt, pepper, parsley, tomato puree and paprika until the tomatoes have reduced and your sauce begins to thicken.
Add the chicken and chorizo back into the sauce.
Step Four
Combine the pasta and sauce and transfer into a deep baking dish.
Step Five
Top with your grated Red Leicester Cheese and Cheddar evenly.
Step Six
Bake until the cheese has melted and begun to crisp up on top.

Ingredients
- 250g Dried Pasta
- 150g Chorizo (sliced)
- 2x Large Chicken Breasts (diced)
- 1x White Onion (diced)
- 2x Garlic Cloves (minced)
- 200g Cherry Tomatoes (havled)
- 2x Large Cooking Tomatoes (finely chopped)
- 1x Tin Chopped Tomatoes
- 100mls Chicken Stock
- 2tsp Smoked Paprika
- Salt & Pepper (to taste)
- 2tbsp Chopped Parsley
- 1tbsp Tomato Puree
- 75g Red Leicester Cheese (grated)
- 75g Strong Cheddar Cheese (grated)
