I’m still very much learning on the recipe video front, so this isn’t the greatest! However, here’s my latest one for how to make delicious and healthy kale and spinach soup. Kale is wonderful if you’re trying to lose weight, as it’s fat free and very low in calories. Healthy, quick, delicious, filling and nutritious... what could be better!
- 150g Chopped Curly Kale
- 150g Spinach
- 5 Diced Carrots
- 2 tbsp Pearl Barley
- 6 Large Tomatoes (chopped into quarters)
- 1.5l Vegetable Stock
- 1 tbsp Mixed Herbs
- Add all the ingredients into a pressure cooker and set for 30 minutes. (Alternatively you can add them all to a large sauce pan and bring to the boil, then reduce the heat and simmer for 45 minutes.)
- Release the pressure and use a potato masher to break up the vegetables in the soup. Serve and enjoy!
