Healthy No Bake Chocolate Cheesecake Pots
Valentine’s Day is just around the corner and love is very much in the air! If you’re looking to impress (or be impressed!) on the 14th February without ruining your healthy eating then this is 100% the recipe for you! These Healthy No Bake Chocolate Cheesecake Pots are just 3.5 syns each and oh so chocolatey, so you won’t even know you’re eating something healthy, more importantly neither will your other half. Served up simply with a sprinkling of cocoa for decoration and some big fresh strawberries you really can’t go wrong!
I can highly recommend, whilst you still can, heading down to Poundland and picking up some of these adorable heart shaped pots. You get three for a pound (amazing right!) and they’re actually pretty big, certainly enough for a tasty pudding as part of your homemade Valentine’s Day menu…after all, you don’t want anything too heavy now do you!
Cheesecake is one of my favourite puddings and thankfully it’s pretty simple to eat a Slimming World friendly version without compromising on that cheesecake-y taste! The base of these Healthy Chocolate Cheesecake Pots are made from Fibre One Brownie Bars (yes, the ones that everyone has gone mental over!) to add that extra chocolate layer to the recipe! If you can’t get your hands on them, because I don’t know, an angry hoard of Slimming World-ers tackles you when you try to take more than one box off the shelf, then you can of course substitute for traditional biscuit. If you do that, simply make sure to adapt the syn amounts to reflect whichever biscuit you use!
When all is said and done, I’m sure that one night off on Valentine’s Day for a meal out or to enjoy that tasty box of chocolates you mysteriously receive won’t do too much damage. However, and trust me I know this from personal experience, ‘just one day’ can often turn into ‘just one week’ and then ‘just one month’ and before you know it you’ve undone all of your hard work. If you’re staying in on Valentine’s Day for a cosy night together, or even with friends, and you want to keep the romance without falling off plan then there is no reason you can’t enjoy delicious food too! Deliciously chocolatey cheesecake pots perfect for Valentine's Day!

Ingredients
- 110g Philadelphia Lightest
- 1x Vanilla Muller Light
- 1tbsp Cocoa Powder (plus extra for dusting)
- 1tbsp Sukrin Melis Icing Sugar
- 2x Fibre One Brownies
- Berries for serving
Instructions
- Whisk together the Philadelphia Lightest, Vanilla Muller Light, Cocoa Powder and Sweetener until smooth and blended. Set aside.
- Crumble up the Fibre One Brownies and press equal amounts into the bottom of each of your pots.
- Spoon the cheesecake mix into each pot until it reaches the top.
- Dust with a bit of cocoa powder and refrigerate for at least half an hour. They don't set but this will help them firm up slightly.
- Serve with fresh berries!
Notes
3.5 syns per serving on Slimming World when using 1/3 of your Healthy Extra A per person (serving three) or 5.25 syns using half of your Healthy Extra A if serving 2 people. The sweetener in this recipe does not need to be synned as there is less than a tablespoon per serving. Syn Values correct at time of writing.
