Day two of sticking to my Slimming World diet and I think I’m doing well! I’m loving thinking of new recipes and ideas (stay tuned for my virtually Syn free cheese cake experiment!) and I am already feeling better! Whether that’s the food or all in my head I don’t know, but I swear I’m already less hungry. Normally even by this point with a diet I’m craving sweats and chocolate (especially as these tend to feature quite heavily in an office environment) but I’m barely even tempted right now…we shall see how I’m doing by Friday!

Here’s a look at what I’ve eaten today!

Three Egg Omelette with Lean Ham and Cheese

I started the day with a hearty breakfast today! This omelette is packed with protein and easily kept me full until lunch.

Fresh Raspberries are a great 'Speed

These were a great snack all day. A great ‘Speed Food’ and really tasty!

Slimming World Crustless Quiche

I tried my hand at making a crustless quiche using the instructions on the Slimming World website. I was really surprised at how much I loved the finished product, and it was so easy to make. I got it all sorted the night before and simply took it into work for a quick, easy and filling lunch. Simply cook up your main ingredients in a frying pan, add to a flan tin and then whisk up 150g fat free cottage cheese with three eggs and pour it over the top. Bake for 20 mins on about 180’C and voila!

 

Syn Free Snack

I prepared this snack for my mid afternoon lull as I knew that I might get a little tired as I hadn’t yet eaten any form of carbs today. This picked me up a treat, it might not be pretty but it was a great Syn free snack.

Turkey Breast with Sweat Potato Mash,

Filling up with veg is really helping me curb my cravings, and this meal is all delicious speed foods! There are two Syns in this meal though, as I used a teaspoon of butter in the mash!
