Tomato & Rocket Salsa

I can honestly say that this salsa is one of the best things I’ve eaten in forever! It’s one of the latest Slimming World recipes, and I saw a lot of hype about it when it came out in the magazine, which I now realise was totally justified!

I served it with bacon and basil wrapped chicken which was also super epic! The best thing about this meal? It’s SP for those of us on Slimming World! I’ve given you the recipe for both the salsa and the chicken I had with it below, as it helps make it into a proper meal!

Tomato & Rocket Salsa

Ingredients

    For the salsa2 Tomatoes
  • 15 Cherry Tomatoes
  • 1 Red Chilli
  • Handful Fresh Basil
  • Handful Fresh Rocket
  • 1.5tsp Lemon Juice (bottled or fresh)
  • Salt & Pepper (to taste)
  • For the chicken2 Chicken Breasts
  • 4 Basil Leaves
  • 4 Rashers Lean Bacon (no rind)
  • Salt & Pepper (to taste)
  • Fry Light

Instructions

    For the salsaPre-heat your oven to 200 degrees and spray a baking tray with Fry Light.
  1. Quarter the large tomatoes and place onto a baking tray.
  2. De-seed and chop or dice the chilli, depending on how small you like your chilli pieces in salsa! Add to the baking tray with the tomatoes, along with a few chopped basil leaves and some salt and pepper. Bake in the oven for 10-15 minutes until the tomatoes have softened.
  3. When the tomatoes have cooked, remove from the oven and tip out of the baking tray. Leave to cool.
  4. Meanwhile, chop the cherry tomatoes into small chunks, and finely chop the basil and rocket. Add them all together in a mixing bowl along with the lemon juice and salt and pepper. Stir until it is well combined.
  5. When the larger tomatoes and chillies have cooled, chop them into smaller pieces (they will squidge everywhere!) and then add to the salsa mix. Season to your tastes.
  6. For the chickenPlace two basil leaves on top of each chicken breast, and then wrap two rashers of bacon over the top of each.
  7. Sprinkle with salt & pepper and spray with Fry Light. Pop in the oven for 30 minutes or until the chicken is completely cooked through.
  8. When cooked, remove from the oven and place on a plate over two large lettuce leaves. Spoon on the tomato salsa and squeeze over some lemon!
  9. Enjoy as a delicious SP meal.
