Best Ever Spinach, Carrot & Leek Soup
I don’t know about you, but for me soup and winter go hand in hand. The minute the weather gets colder I’m straight into the kitchen, blitzing up all manner of different ingredients to test out new and exciting soup flavours to keep me warm and interested on these long cold days! This Spinach, Carrot & Leek Soup was the result of one of my recent meal prepping days, and man does it taste good!
Is This Soup Slimming World Friendly?
I’m doing my best to stay on plan as we get closer to winter, so for me it’s essential that I’m creating ‘on-plan’ Slimming World friendly recipes to keep me going. This soup is not only 100% syn free on Slimming World, it’s also super nutritious, as it’s high in protein, iron and vitamin C, not to mention all sorts of other essential nutrients. Time To Get Meal Prepping?
If like me, you lead a hectic, occasionally disorganised life, this is an excellent option for meal prep! It’s not just because you can make it in bulk, freeze it and take it to work, but soup also doesn’t feel like meal prep. If you have ever meal prepped before, you’ll know that sometimes it can get a bit boring. I love it as much as the next girl, but occasionally another week of rice, veg and meat packed tight into old takeaway containers can feel a tad on the dull side. With soup, however, life suddenly gets interesting and because soup is just soup, it doesn’t seem like a big meal prep activity. Maybe it’s just me, but it can provide a great change, particularly as the weather gets cold!

Slimming World Meal Planning
This is the perfect addition to your meal plans, whether you’re meal prepping or cooking every day. Ever since I’ve been doing Slimming World I’ve found that creating meal plans can be a total lifesaver. It’s definitely not something I do every week, but when I’m anticipating a particularly busy week at work, or know that I’m going to end up with a few evenings off plan, a meal plan can make all the difference to help me stay on plan. Making Best Ever Spinach, Carrot & Leek Soup

A delicious vegetable soup to warm you this winter!

Ingredients
- 260g Spinach
- 3x Large Carrots (peeled & sliced)
- 2x Large Leeks (sliced)
- 1x Onion (roughly chopped)
- 3x Garlic Cloves (crushed)
- 2x Pint Vegetable Stock
- Fry Light
Instructions
- In a large saucepan fry the onion and garlic over a medium heat until they begin to soften.
- Add the carrots and leeks, and stir over the heat until the leeks begin to soften and break up.
- Add the spinach and stir until it wilts.
- Add half of the stock and the rest of the spinach, stir until combined.
- Cover and reduce the heat, simmer for 30 minutes and then add the rest of the stock.
- Simmer for a further 20 minutes and allow to cool slightly. Blend with a hand blender or food processor until smooth.
- Reheat as needed and serve hot!
