Healthy Blueberry Muffin Breakfast Bars

I am obsessed with breakfast bars at the moment! You might have seen my Low Syn Cranberry & Chocolate Breakfast Bars recently, and my Healthy No Bake Meal Prep Bars are one of my most popular recipes on Pinterest – so it seems that other people love healthy breakfast bars too!
Having a nutritious, filling start to the day is one of the most important things you can do when trying to eat healthily, or lose weight. These Healthy Blueberry Muffin Breakfast Bars make an excellent breakfast or snack and they will definitely keep you full and satisfied.
Healthy Blueberry Muffin Breakfast Bars on Slimming World
The great thing about these breakfast bars, is that it basically feels like you’re eating cake! They’re made using your Healthy Extra B oats and have a really satisfying mix between the crumbly oat cake and the soft, squishy and sweet blueberries.
The recipe makes eight individual bars, and each one uses just half of your Healthy Extra B portion plus 2 syns per bar.
When I posted my recipe for Syn Free American Style Pancakes the other day, someone commented to ask whether the blended oats needed to be synned as they’re simulating flour. Given that the same question might pop up with these, I want to make it clear that you DO NOT need to syn the blended oats.
The reason for this is that they are being counted as your Healthy Extra B, so it’s not the same as a free food being used in place of a synned food. The syns in this recipe work out as follows:
- 200g Blueberries (cooked) – 2 syns
- 240g Porridge Oats – 4x Healthy Extra B
- 1tsp Baking Soda – 1/2 syn
- 3x Eggs – syn free
- 4tbsp Granulated Sweetener – 2 syns
- 1tbsp Butter (melted) – 5.5 syns
- 80mls Semi Skimmed Milk – 2 syns
- 4tsp Flour – 2 syns
- 1tsp Cinnamon – syn free
This works out at 14 syns for the full recipe, which breaks down as 1.75 syns per bar. I’ve rounded this up to 2 syns per breakfast bar to help you protect your losses.
Making Healthy Blueberry Muffin Breakfast Bars – Step by Step
These breakfast bars really couldn’t be more simple to create – you just need a few simple ingredients and half an hour! Here are the step by step instructions, and you can find the recipe at the end of the post too.
Step One
Preheat your oven to 180 degrees.
Over a low heat, simmer half of the blueberries until they break down into a liquid. Set aside for later.
Step Two
Blitz half of the oats in a food processor until they are a fine powder.
Combine the blitzed oats, whole oats, granulated sweetener, flour, baking powder and cinnamon together in a mixing bowl.
Step Three
Add the eggs, milk and melted butter and combine using a whisk or wooden spoon.
Step Four
Transfer into a baking dish that you have either lined with baking paper or sprayed with low calorie cooking spray.
Spoon over the cooked fruit evenly and use a skewer or knife to marble the fruit through the oat mix.
Step Five
Sprinkle over the rest of the blueberries and press them lightly into the top of the mix.
Step Six
Bake for 25-30 minutes, or until the mixture is cooked through and a skewer comes out clean when inserted into the center.
Allow to cool completely and then remove from the baking tray. Slice into 8 portions.
